Add some sweet heat to the favorite movie night snack

Chipotle Brown Sugar Popcorn
Vegan, Gluten-Free

  Ingredients
2 tablespoons olive oil, plus more for the bowl
¼ cup white organic popcorn kernels (see note)
1-2 tablespoons Chipotle Brown Sugar Rub
1-2 teaspoons kosher sea salt
Preparation
Heat 2 tablespoons olive oil in a heavy bottomed saucepan over high heat. Add the popcorn kernels when the oil shimmering but not smoking. Toss in the oil and cover once they begin to pop. Shake the pan and adjust the heat so the kernels continue to pop but do not get scorched. Turn the heat off when there is no longer any sound of popping, about 2 minutes, but allow the popped corn to sit for about another minute so that the steam settles and the popped kernels dry out of bit. Empty the pan into a large bowl and sprinkle with Chipotle Brown Sugar Rub – you may use as much or as little as you desire. Add some olive oil to coat the popped corn but not drown it. Sprinkle with the kosher sea salt to taste.
